Spinach & Paneer Quesadilla


Ingredients
  • 4 tortillas 
  • 4 cups spinach
  • 1 cup grated cottage cheese (Paneer)
  • 1 tbsp minced garlic
  • 1 tsp red chilli flakes
  • 1 tsp taco seasoning
  • Oil, salt to taste
  • Melted butter bake quesadillas

Method
- Heat oil in a pan over medium heat, saute garlic for few seconds. Add spinach, chilli flakes and cook for 1 minutes, season with a touch of salt.
- Then add the grated cottage cheese to the pan, stir well to mix with the spinach. Add taco seasoning and give it a final stir. Turn off the heat and set aside.
- Heat a griddle pan on a medium heat. Pour some cooked spinach on top of each tortilla, and fold it in half. Use a cooking brush to apply melted butter on both side of the quesadillas. Then cook them in the heated griddle pan for 2-3 minutes each side.
- Serve hot.
